The importance of using basil (Mentha spicata) oil extracts and their using food industries

Abstract

The present study investigated that physical properties and its characteristics with addition to the chemical composition of basil oil extract (Ocimum basilicum) from the mint family (Lamiaceae). The ability of this oil to inhibit the growth of certain microorganisms isolated from meat was studied using the agar diffusion method. The total number of microorganisms in minced meat treated with this oil was counted for different time periods (1–72 and 192 hours). The results of this research showed that this oil has a clear effect in inhibiting the growth of microorganisms, especially Staphylococcus aureus. A decrease in the number of bacteria was observed in all oil-treated groups compared to the control group. Furthermore, this decrease was observed across all treatment groups and the control group for all storage periods. Essential oil extracts from this plant, belonging to the mint family, have the potential to inhibit the growth of microorganisms when used in specialized food industries, particularly those related to meat.
